We
are a small family farm located in southwest Colorado. Our primary crop
is peaches, peaches, peaches! Everyone wants their fruit to taste good,
but exactly what does that mean. Peaches that stay on the tree longer
develop higher sugar (or Brix) and therefore make sweeter, jucier, more
flavorful peaches.

picked too green will never have the sweetness, full flavor and juciness
we all want in a peach.

While
higher Brix (sugar) levels, as measured by a simple refractometer, mean
a deeper gold, more flavorful, more aromatic, sweeter, juicier peach
with better keeping qualities, it also is an indicator of general farming
practices, soil fertility, and ripening potential. Farming practices
that encourage a vibrant, healthy farm have many rewards, one of which
speaks for itself at harvest time in the rich flavor of the fruit.
